Stuffed Pumpernickel

this is an excellent appetizer for showers or parties

Yields: 1 loaf

Ingredients

  • 1  loaf  pumpernickel bread
  • 10  ounces spinach (cooked drained and cooled)
  • 1  cup mayonnaise
  • 2  cups sour cream
  • 2  tablespoons  onion flakes
  • 1 (3 ounce) package  knorr 7  vegetable soup mix

Directions

  1. Mix mayonnaise, sour cream, soup mix and onion flakes.
  2. Add spinach and mix well.
  3. Slice top off pumpernickle loaf and set aside.
  4. Hollow out inside leaving 1/2 inch all around.
  5. Pour mixture into the loaf.
  6. Top with top of loaf.
  7. Serve with reserved pieces of bread cubed to dip.
