Stuffed Peppers

A healthy recipe that can be served as an appetizer or a main

Yields: 1 stuffed pepper

  1. Cut tops off of peppers and remove seeds and pulp.
  2. Preheat oven to 350 degrees F.
  3. Brown meat in a pan with onion, mushroom, and garlic, and set aside.
  4. Cook one cup of rice (I use easy cook which is 1 cup rice to 2 cups water) and then set aside with the top off so rice can breathe and dry.
  5. Heat meat mixture on low and add tomato sauce, tomato, and mixed herbs.
  6. When rice is dry enough to not stick to itself, add it to the pan and mix all together.
  7. Spoon mixture into hollowed out peppers.
  8. Top with grated cheese and place in oven until the cheese is melted and very slightly browned.
