  1. Cut avocados in half and remove seeds. Scoop out flesh, taking care to not break shell.
  2. In a bowl, mash together avocado, tomato, onion, lime juice, cilantro, endive, and salt and pepper to taste.
  3. Fill avocado shells with mixture. Garnish with more chopped cilantro and endive.
