Stuffed Avocados

Ingredients
- 2 avocados
- 1 roma tomato, diced
- 2 tablespoons finely sliced sweet onions
- 1 lime, juice of
- 2 sprigs cilantro, chopped
- 1 Belgian endive, thinly sliced
- salt
- hot pepper sauce
Directions
- Cut avocados in half and remove seeds. Scoop out flesh, taking care to not break shell.
- In a bowl, mash together avocado, tomato, onion, lime juice, cilantro, endive, and salt and pepper to taste.
- Fill avocado shells with mixture. Garnish with more chopped cilantro and endive.
