Stroganoff

Ingredients
- 1 lb cubed beef (sirloin, mock chuck, stew meat)
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 tablespoon vegetable oil (or olive oil, shortening, butter)
- 1 (3 ounce) can mushroom pieces or 1 cup fresh mushrooms
- 1 medium onion, chopped
- 2 garlic cloves, grated
- 1 cup beef stock (or vegetable or beef boullion)
- 1⁄2 cup sour cream
Directions
- Heat oil in skillet with lid.
- Saute beef, salt, pepper, onion, garlic, and mushrooms until brown.
- Add beef stock, turn down heat, cover and simmer for 30 minutes or so. Watch the level of broth - it should not cook completely down, so add water or broth if you need more.
- When meat is tender, remove from heat.
- Add sour cream and mix.
- Serve over cooked egg noodles.
