Strawberry Vinaigrette

I found this recipe on the smuckers web site. It is very good on a strawberry salad. You can use sugar free preserves, or any flavor preserve.

• Yields: 2 1/2 cups

Ingredients

• 1  cup  strawberry preserves
• 1⁄4 cup  balsamic vinegar
• 1⁄4 cup Dijon mustard
• 1⁄2 teaspoon ground pepper
• 1⁄2 cup olive oil
• 1⁄2 cup water

Directions

1. In a medium bowl, whisk together preserves vinegar, mustard and pepper, until thoroughly emulsified.
2. gradually whisk in olive oil, then water.
