Strawberry Spinach Salad

There are a lot of spinach salad variations, but this is one of my favorites.

• Serves: 4-6

Ingredients

• Dressing

• 1⁄3 cup apple cider vinegar
• 1⁄3 cup canola oil
• 1  tablespoon poppy seed
• 1  tablespoon ground mustard
• 1 -2  tablespoon sugar
• 1  teaspoon salt
• 1⁄2 teaspoon pepper

• Salad

• 4  cups spinach
• 2 -3  slices  cooked bacon, crumbled
• 1  egg, hard boiled and chopped
• 1⁄3 cup  sliced strawberry
• 2  chopped scallions

Directions

1. Combine all dressing ingredients in a jar and shake.
2. Pour dressing over salad mixture and enjoy.
