Strawberry Rhapsody Jam

My Hubby loves strawberry jam and this is one of the recipe I use - very good!!

Ready In: 20 mins

Yields: 3-4 jam jars

Ingredients

  • 3  cups  crushed strawberries
  • 1  cup  crushed raspberries
  • 1  cup  unsweetened apple juice or 1  cup cranberry juice
  •  bernardin no-sugar needed  fruit pectin (1 package)
  •  artificial sweetener (1 1/2 cups granulated sugar or 1 1/2 cups Splenda sugar substitute) (optional)

Directions

  1. Preheat mason jars and Snap lids.
  2. Combine strawberries and raspberries and fruit pectin in a large deep stainless steel saucepan. Whisk in fruit pectin.
  3. If using sweetener, measure Splenda or sugar and set aside. Stirring constantly, bring fruit mixture to a boil over high heat. If using, add sweetener or sugar, and return mixture to a boil, stirring frequently. Boil 3 minutes. Remove form heat. Skim foam.
  4. Ladle into hot jars.
