Strawberry Parfait

Ingredients

  • 34 lb strawberry, sliced
  • 14 cup  plus 2 tablespoons Splenda sugar substitute
  • 1 12 cups  ricottia cheese, I use low fat
  • 18 teaspoon  almond extract
  • 18 cup  toasted almond, sliced

Directions

  1. Toss strawberries with 1/4 cup splenda and let stand until juicy.
  2. Whisk ricotta with remaing 2 T sugar and almond extract.
  3. Layer ricotta with strawberry minture in glasses and top with almonds.
  4. Chill for several hours.
