Strawberry Parfait

Ingredients
- 3⁄4 lb strawberry, sliced
- 1⁄4 cup plus 2 tablespoons Splenda sugar substitute
- 1 1⁄2 cups ricottia cheese, I use low fat
- 1⁄8 teaspoon almond extract
- 1⁄8 cup toasted almond, sliced
Directions
- Toss strawberries with 1/4 cup splenda and let stand until juicy.
- Whisk ricotta with remaing 2 T sugar and almond extract.
- Layer ricotta with strawberry minture in glasses and top with almonds.
- Chill for several hours.
