Strawberry Jam

I found this recipe on the C.S.R. sugar site, and the family loved it. Very easy and quick to make.

  1. Wash, hull and chop strawberries.
  2. Cook slowly until soft. Do not add any water.
  3. Add warmed sugar and lemon juice, return slowly to boil, then boil rapidly until mixture sets, about 20 minutes.
  4. Bottle in sterilised jars.
  5. Don't chop berries, add them whole to pan, when beginning to soften simply mash with potato masher.
  6. This cuts first cooking to about half the time, and helps make a smooth jam.
