Strawberry Ice Cream

Yields: 3 1/2 cups
Ingredients
- 1 lb frozen strawberries
- 1 cup of 2% plain Greek yogurt
- 1⁄4 cup sugar
- 1⁄2 teaspoon vanilla extract
Directions
- In a food processor with a knife blade, pulse 1 cup of strawberries until finely chopped. Transfer to large metal bowl.
- Puree yogurt, sugar, vanilla, and remaining strawberries in the food processer until smooth. Transfer to bowl with the chopped strawberries and stir until well combined.
- Cover and freeze about one hour--until firm but not hard.
