Strawberry Cream Cheese Waffle Sandwiches

Great breakfast or snack! I also like to serve these open-faced on mini-waffles for a bite-sized treat.

• Serves: 4

Ingredients

• 4  ounces reduced-fat cream cheese (regular is ok)
• 4  teaspoons brown sugar
• 1⁄4 teaspoon ground cinnamon
• 3⁄4 cup  sliced strawberry
• 8  frozen multi-grain waffles, toasted

Directions

1. Using a hand mixer, blend cream cheese, brown sugar and cinnamon at medium speed until light and fluffy.
2. Gently fold in strawberries.
3. Spread even amounts of mixture over 4 waffles.
4. Top with remaining 4 waffles.
