Strawberry Cordial

Posted in anticipation of a bumper crop of strawberries from my plants, from BH&G.

• Yields: 1 litre

Ingredients

• 500  g strawberries, hulled & cut in half
• 2  teaspoons  citric acid
• 1 1⁄2 cups water
• 2  cups white sugar

Directions

1. Place strawberries in a Large ceramic or glass bowl with citric acid & water. Cover and allow to stand for 24hours.
2. Pour liquid through a fine sieve lined with muslin into a medium sized saucepan and add sugar.
3. Stir over low heat just until sugar dissolves, do not allow it to boil.
4. Remove from heat & pour into sterilised bottles & refrigerate.
