Strawberry Almond Spinach Salad

I liked the idea of using the yogurt with the balsamic for a creamy dressing. Yummy!

Serves: 2

Ingredients

  • 3  ounces  baby spinach leaves, torn
  • 1  cup  sliced ripe strawberry
  • 14 cup  shaved parmesan cheese
  • 14 cup  toasted sliced almonds
  • for the dressing

  • 14 cup  low-fat strawberry yogurt or 14 cup  strawberry yogurt  smoothie
  • 2  tablespoons extra virgin olive oil
  • 1  tablespoon  aged  balsamic vinegar
  •  salt and pepper, if desired

Directions

  1. Gently toss salad ingredients together in a bowl.
  2. Whisk together ingredients for dressing and gently mix with salad.
