Stir Fried Snow Peas With Mushrooms

This is an easy stir fry that is great to accompany salmon or other fish. Also a great main dish if doubled and served with white rice. Delicious as a side dish for Teriyaki Ginger Salmon. Show more

Serves: 2-4

Ingredients

  • 12 lb snow peas (can use frozen if fresh are not available) or 12 lb sugar snap pea (can use frozen if fresh are not available)
  • 1 (8 ounce) package  sliced mushrooms (don't substitute canned)
  • 3  tablespoons  peanut oil
  • 1 12 tablespoons  chopped garlic
  • 1 12 tablespoons  chopped ginger
  • 34 teaspoon kosher salt
  • 1 12 teaspoons sugar
  • 3 -5  drops  sesame oil

Directions

  1. String the snow peas.
  2. Heat a skillet over high heat and add the peanut oil.
  3. When hot, add the mushrooms and stir briefly over high heat.
  4. Add the garlic, ginger, and snow peas, and stir until well coated with the oil.
  5. Add the salt and sugar.
  6. Continue to stir over high heat until most of the liquid has disappeared and the peas are crisp yet tender.
  7. Serve sprinkled with the sesame oil.
  8. Delicious as a side dish for Kimke's Teriyaki Ginger Salmon.
