Ingredients

  • 2  tablespoons butter or 2  tablespoons margarine
  • 2  tablespoons shallots, chopped
  • 1  lb fresh asparagus, bottoms snapped, sliced diagonally into 1-inch pieces
  • 2  cups  sliced fresh mushrooms
  •  salt & pepper
  • 4  tablespoons  coriander, fresh, chopped

Directions

  1. Melt butter/margarine in a wok or heavy skillet. Add mushrooms and sauté, stirring until they are browned evenly.
  2. Add asparagus and sauté, stirring for 1 minute.
  3. Add salt, pepper and shallots; sauté 1/2 minute.
  4. Sprinkle with the coriander and serve.
