Steve's Potato Salad

Ingredients
- 5 lbs russet potatoes, peeled, diced, and boiled until tender
- 5 stalks celery, chopped
- 1 medium onion, diced
- 8 hard-boiled eggs, chopped
- 4 tablespoons white vinegar
- 2 tablespoons sugar
- 3 cups hellmann's mayonnaise
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon pepper
Directions
- While potatoes are boiling combine rest of ingredients except eggs together in a small bowl to make the dressing.
- When potatoes are tender, drain, and put in a large bowl.
- While potatoes are still warm add dressing mixture and eggs.
- Refrigerate until cool, garnish with a few sprinkles of paprika if desired, and serve.
