Stephanie Russo's Morning Glory Bread

Ingredients
- 1 cup pecans, toasted and chopped
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1 1⁄2 cups sugar
- 3⁄4 cup applesauce
- 3 large eggs
- 2 teaspoons vanilla
- 1 cup chopped pineapple
- 1 cup carrot, finely grated
- 1 cup raisins
Directions
- Preheat oven to 350 degrees.
- Combine flour, salt, baking soda, cinnamon, and nutmeg.
- In another bowl, mix together sugar, applesauce, eggs, and vanilla.
- Fold the carrots and pineapple into the applesauce mixture.
- Toss the pecans and raisins in the dry ingredients and then combine both mixtures and stir just until all ingredients are moistened.
- Pour batter into 2-8x4" loaf pans and bake 55-60 minutes.
