Standout Beef Fried Rice

Ingredients
- 1 tablespoon olive oil
- 3 eggs, lightly beaten
- 1 teaspoon olive oil
- 3 (5 ounce) boneless sirloin steaks, cut into thin strips
- 2 1⁄2 cups coleslaw mix (green & red cabbage, carrots and broccoli mix)
- 1⁄2 lb fresh asparagus, trimmed and cut into 1 1/2-inch pieces
- 1⁄2 cup sweet onion, chopped
- 4 cups cold cooked rice
- 3 tablespoons butter, cubed
- 3 tablespoons soy sauce
- 1⁄8 teaspoon black pepper (or to taste)
Directions
- In a large skillet, heat 1 tbs of oil until hot. Add eggs, cook and stir over medium heat until completely set. Remove from pan and keep warm.
- In the same pan, add the 1 tsp of oil and stir-fry the beef strips, coleslaw, asparagus and onion for 4-6 minutes or until veggies are crisp/tender.
- Add rice and butter to pan, cook and stir over medium heat for 1-2 minutes or until heated through.
- Add the cooked eggs, soy sauce and pepper and stir until well mixed and warmed.
