Standard Italian Salad

Serves: 2-4
Ingredients
- 1 head romaine lettuce, chopped
- 1 shallot, chopped very fine
- 1⁄2 cup cherry tomatoes, halved
- 1⁄2 cup fresh parsley, chopped
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- salt, to taste
- pepper, to taste
- 4 -6 tablespoons extra virgin olive oil
- 2 -3 tablespoons red wine vinegar
Directions
- Clean and chop the romaine lettuce.
- Place in a large bowl (preferably Tupperware with a lid) with shallot, tomatoes, parsley, oregano, basil, salt & pepper.
- Add the oil and vinegar, place the lid on bowl, shake vigorously.
- If not satisfied with taste add more salt & pepper or more vinegar.
