Sri Lankan Curry Powder ( Simple Version)

Ingredients
- 1 ounce coriander seed
- 1⁄2 ounce cumin seed
- 1 tablespoon fennel seed
- 1 teaspoon fenugreek seeds
- 1 cinnamon stick
- 6 green cardamoms
- 6 cloves
- 6 curry leaves
- 1 teaspoon chili powder
Directions
- In a heavy pan dry roast the first seven spices, stirring from time to time, to prevent burning. Allow to cool. Grind the spices with the curry leaves and chilli powder.
- Store in air tight jars, it will keep for up to 6 months.
