Squidgy Date Cake

Ingredients
- 200 g dates, pitted and chopped
- 185 g butter
- 1 cup brown sugar
- 2 eggs, lightly beaten
- 50 g fresh ginger, grated
- 1 cup self raising flour
Directions
- Heat oven 160 C.
- Grease and line 20 cm round tin.
- Put dates in bowl and cover with boiling water.
- Melt butter in pot, stir in sugar, allow to cool.
- Add eggs and ginger to pot.
- Drain dates and add to pot.
- Stir in flour, then spoon mixture into cake tin.
- Bake 50 - 60 minutess - a skewer stuck into cake should come out with a few moist crumbs sticking to it.
- Leave to cool in tin.
