Squash Soup With Ginger and Goat Cheese

Ingredients
- 3 tablespoons butter
- 3 tablespoons finely sliced shallots
- 2 cups chopped acorn squash
- 1 tablespoon grated fresh ginger
- 2 1⁄2 cups vegetable broth
- salt and pepper
- 4 tablespoons goat cheese
- finely chopped fresh chives
Directions
- In pot, melt butter over medium heat. Sauté shallots. Add squash, ginger and vegetable stock. Season with salt and pepper to taste. Simmer 20 min, or until squash is soft.
- In batches, puree until smooth. Heat until steaming. Adjust seasoning.
- In bowl, combine cheese and chives to taste. Ladle soup into bowls and garnish each with a quenelle of cheese.
