Squash & Cornbread Dressing

Vegetable that can be used as a side or just by itself

Yields: 4-6 cups

Ingredients

  • 2  cups  cooked squash
  • 2  cups  cooked crumbled  cornbread
  • 2  eggs, beaten
  • 1 (10 1/2ounce) can  cream of chicken soup
  • 1  medium onion, chopped
  • 12  chopped bell pepper (optional)
  • 12 cup  melted butter
  •  salt
  •  pepper

Directions

  1. Cook onion, pepper and squash with half of butter until tender.
  2. mix soup, eggs, cornbread together in large bowl.
  3. add squash to bread mixture.
  4. add rest of butter.
  5. add salt and pepper.
  6. stir well.
  7. put in baking dish
  8. heat on 375
  9. just until heated through.
