Squash Casserole With Pimento

A delicious side dish with the turkey at Thanksgiving. Very light and spicy. We use Hubbard Squash but any winter squash would work. Easily prepared in advance and baked later. Time does not include cooking and mashing squash. Show more

  1. Preheat oven to 350.
  2. Melt butter in hot milk and pour over the bread crumbs. Mix well and add squash, onion, pimento and seasonings.
  3. Beat eggs and add to squash mixture.
  4. Pour into a greased 2-quart casserole and cover with buttered bread crumbs.
  5. Bake 20 to 30 minutes.
