Squash Casserole

Serves: 8

Ingredients

  • 3  lbs  yellow squash
  • 12 cup onion, chopped
  • 2  eggs
  • 12 cup margarine or 12 cup butter
  • 12 cup  vigo  breadcrumbs
  • 1 -4  tablespoon sugar, to taste
  • 12 teaspoon black pepper
  • 1  teaspoon salt

Directions

  1. Cut squash and onion.
  2. Boil together until tender.
  3. Drain well.
  4. Mash.
  5. Add eggs, salt, pepper, sugar, and half the margarine/butter.
  6. Pour mixture into baking dish.
  7. Melt remaining margarine/butter and put on top of mixture.
  8. Cover with bread crumbs and bake at 375 degrees until brown (about 1 hour).
