Ingredients
- 2 tablespoons unsalted butter, divided
- carrot
- 1⁄2 cup sliced spring onion, trimmed and peeled
- 1⁄2 cup sliced shallot
- 1⁄2 teaspoon sea salt
- 1⁄4 teaspoon fresh ground black pepper
- 1⁄2 cup water
- 2 cups shelled english green peas (about 2 pounds unshelled green peas)
- 8 bibb lettuce (about 1/4 pound)
Directions
- Melt 1 tablespoon butter in a large saucepan over medium heat.
- Add carrot, sliced onion, shallots, sea salt, and ground black pepper, stirring to combine. Cover and cook 7 minutes, stirring occasionally.
- Add water and peas; place lettuce leaves on top of mixture. Cover and cook 5 minutes or until peas are tender. Remove from heat; gently stir in 1 tablespoon butter.
