Spring Greens with Honey Mint Vinaigrette

Ingredients
- 1⁄2 cup vegetable oil
- 1⁄3 cup cider vinegar
- 2 tablespoons liqud honey
- 1 tablespoon of fresh mint, chopped (or 1 tsp dried mint)
- 1⁄2 teaspoon Dijon mustard
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 12 cups torn mixed greens
- 1 cup mushroom, thinly sliced
Directions
- Whisk all ingredients except greens and mushrooms together.
- Toss greens and mushrooms with vinaigrette.
