Spring Beet Salad With Walnuts

Ingredients
- 1 lb fresh beet, cooked
- 1⁄2 cup walnuts, finely chopped
Dressing
- 1 tablespoon horseradish
- 1⁄2 cup sour cream (or plain joghurt)
- 1 tablespoon mayonnaise
- 1⁄4 cup half-and-half cream
- 1⁄3 cup orange juice
- salt and pepper
- 2 tablespoons chopped parsley (to garnish)
Directions
- Peel and dice beets.
- Add walnuts.
- Combine dressing ingredients and add to beets.
- Garnish with parsley.
