Spring Arugula Salad With Farro

Ingredients

  • 8  cups arugula
  • 1  cup  fresh  almonds
  • 1  cup  cracked farro (1 small bag)
  • 1  cup sharp cheddar cheese
  • 1  cup pomegranate seeds
  • 1  tablespoon olive oil
  • 1  tablespoon  balsamic vinegar
  • 1  tablespoon  honey mustard
  • 1  teaspoon  your favorite  spices
  • 1  honey crisp apple

Directions

  1. 1. boil water and add farro to start that cooking.
  2. in a pan, add some oil of your choice and a little salt and roast the almonds for about 5 min.
  3. chop apples, and chop up some small pieces of cheddar cheese
  4. after farro has boiled for 10 minutes, strain with cold water. Then mix everything together. Farro, pomegranate seeds, apple, cheese, tosted almonds and arugula.
  5. finally mix balsaminc, olive oil, mustard and a seasoning of your choice together to create your dressing.
