Spring Arugula Salad With Farro

Ingredients
- 8 cups arugula
- 1 cup fresh almonds
- 1 cup cracked farro (1 small bag)
- 1 cup sharp cheddar cheese
- 1 cup pomegranate seeds
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey mustard
- 1 teaspoon your favorite spices
- 1 honey crisp apple
Directions
- 1. boil water and add farro to start that cooking.
- in a pan, add some oil of your choice and a little salt and roast the almonds for about 5 min.
- chop apples, and chop up some small pieces of cheddar cheese
- after farro has boiled for 10 minutes, strain with cold water. Then mix everything together. Farro, pomegranate seeds, apple, cheese, tosted almonds and arugula.
- finally mix balsaminc, olive oil, mustard and a seasoning of your choice together to create your dressing.
