Split Pea Soup

Ingredients
- 2 carrots, sliced
- 1 onion, diced
- 2 stalks celery, diced
- 1 (16 ounce) bag dried split peas
- 1 bay leaf
- 3 garlic cloves, minced
- 5 cups chicken broth (more if needed while cooking)
- 4 tablespoons extra virgin olive oil
- salt and pepper
Directions
- Slice and saute all the vegetales in the olive oil in a large pot.
- Check through the split peas for pebbles and remove.
- Add split peas to the vegetables and saute for 3 minutes.
- Add bay leaf and the water.
- Simmer for about 2 1/2 hours until peas are soft.
- Adjust seasonings.
