Split Pea Chowder

This is a great way to use up leftover chicken.

Serves: 8

Ingredients

  • 3  cups  diced  cooked chicken
  • 1 12 cups carrots, finely chopped
  • 1  cup onion, finely chopped
  • 34 cup celery, finely chopped
  • 2  medium  sized potatoes, peeled diced
  • 18 teaspoon dried thyme
  • 1 (16 ounce) package  split peas, rinsed, drained
  • 8  cups chicken broth
  • 14 teaspoon salt
  • 18 teaspoon pepper

Directions

  1. In a 5 quart Dutch oven combine all ingredients.
  2. Bring to a boil.
  3. Reduce heat.
  4. Cover and simmer for 45 to 60 minutes, or until chowder has thickedned, stirring occasionally.
