Ingredients

  • 23 cup  fat-free low-sodium chicken broth or 23 cup water
  • 13 cup  sliced scallion (save a tad for garnish)
  • 13 cup dried cranberries
  • 1  pinch dried basil
  • 6  ounces  Baby Spinach
  • 1  teaspoon  toasted pine nuts (optional)

Directions

  1. In a hot pan place broth, scallions, and cranberries cook for 1 minute.
  2. Add basil and spinach toss and cook 1 minute just till wilted.
  3. Top with pine nuts and scallions for garnish.
