Spinach With Cream and Melted Cheese

Ingredients
- 4 bunches fresh spinach, washed and dried
- 2 cups white sauce
- 1⁄3 cup gruyere, cheese grated
- butter
- paprika
- salt and pepper, to taste
Directions
- place spinach in salted boiling water and add some pepper. cover and cook 3 minutes.
- cool spinach under cold running water, drain and squeeze leaves dry, and chop.
- butter baking dish and add chopped spinach. dab with a bit of butter. season with salt and pepper and paprika.
- pour light white sauce over spinach, and sprinkle with cheese. broil 10 minutes in oven.
- serve hot.
