Spinach White Bean Soup With Red Potatoes

Ingredients
- 4 cups vegetable broth
- 2 cups water
- 10 ounces spinach, chopped
- 1 (14 1/2ounce) can diced tomatoes
- 1 garlic clove
- 1 lb red potatoes, diced
- 1 (14 1/2ounce) can great northern beans
Directions
- In a large stock pot, bring broth and water to a boil. Add the tomatoes and potatoes and garlic, and return to a simmer. Cover and cook until potatoes are tender, 10 to 15 minutes. Stir in beans and spinach until heated through and spinach is wilted, about 2 minutes. Season with pepper to taste.
