  1. In a large stock pot, bring broth and water to a boil. Add the tomatoes and potatoes and garlic, and return to a simmer. Cover and cook until potatoes are tender, 10 to 15 minutes. Stir in beans and spinach until heated through and spinach is wilted, about 2 minutes. Season with pepper to taste.
