Spinach Tofu Dip

Ingredients
- 8 ounces soft tofu
- 6 green onions, cut in chunks
- 2 garlic cloves, crushed
- 1⁄4 cup mayonnaise
- 1⁄4 cup sour cream
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 8 cups spinach
- black pepper
Directions
- In food processor, process everything except the spinach until smooth.
- Add spinach and pulse until finely chopped and blended. Cover and refrigerate for 1 hour before serving.
