Spinach Toast

Ingredients
- 4 slices whole wheat bread
- 1 cup spinach, washed and finely chopped
- 1⁄4 cup panir (cottage cheese)
- 1⁄2 onion, finely chopped
- 1⁄2 tomatoes, finely chopped
- 1⁄2 teaspoon ginger paste
- 1⁄2 teaspoon chili paste
- 1 teaspoon oil
- lemon juice
- salt
Directions
- Heat oil in a pan.
- Add the finely chopped onion and ginger-chilli paste. Saute till light brown.
- Add the chopped tomatoes and salt. Mix well.
- Add the finely chopped spinach and crumbled paneer.
- Cook on high flame, till the water dries out.
- Add lemon juice.
- Spread the mixture on the whole-wheat bread slices and grill or toast them.
- Serve warm.
