Spinach Stuffed Manicotti

Ingredients
- 1 (8 ounce) package manicotti
- 1 lb ground beef
- 1⁄2 cup chopped onion
- 2 garlic cloves, chopped
- pz jar pasta sauce
- 1 teaspoon dried oregano
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 3 cups shredded mozzarella cheese
- 1 (16 ounce) container ricotta cheese
- 1 (10 ounce) package frozen chopped spinach, thawed and well drained
- 2 eggs
- 1⁄2 cup grated parmesan cheese
Directions
- Cook manicotti as package directs and drain.
- Preheat oven to 350 degrees.
- In a large saucepan, over medium heat, brown meat and pour off the fat.
- Add onion and garlic; cook and stir until tender.
- Stir in pasta sauce and oregano, salt and pepper.
- Simmer 15 minutes.
- In a bowl, combine 2 cups Mozzarella cheese, Ricotta cheese, spinach, eggs and Parmesan cheese.
- Mix well.
- Stuff into the Manicotti.
- Line them up in a greased 9 x 13 baking dish.
- Evenly spoon the sauce over the top.
- Cover and bake for 30 minutes.
- Remove the cover and top with the remaining 1 cup of mozzarella cheese.
- Bake 15 minutes longer.
- Let stand 15 minutes.
- Serve and enjoy.
