Spinach Souffle

Ingredients
- 2 (10 ounce) packages frozen leaf spinach, thawed
- 1 large egg
- 1⁄3 cup low-fat milk
- 1⁄3 cup grated parmesan cheese
- 1 teaspoon crushed garlic
- salt and pepper
Directions
- Preheat oven to 350 degrees F.
- Whisk together egg, milk, cheese, garlic, salt and pepper.
- Fold in spinach.
- Pour into small casserole dish.
- Bake for 20 minutes or until lightly set.
