Spinach Salad With Creamy Wasabi Dressing

An east way to dress up fresh spinach. Recipe adapted from Earthbound Farms.

Ingredients

• Dressing

• 1⁄4 cup sour cream
• 1⁄4 cup mayonnaise
• 2  teaspoons wasabi powder or 2  teaspoons wasabi paste
• 1  tablespoon  rice wine vinegar
• 1⁄8 teaspoon salt
• 1⁄4 teaspoon pepper

• Salad

• 2 (5 ounce) packages  Baby Spinach
• 1⁄2 cup carrot, shredded
• 1⁄2 cup radish, thinly sliced

• Garnish

•  chow mein noodles

Directions

1. Combine dressing ingredients in a blender or food processor.
2. Toss salad ingredients, add dressing and toss again.
3. Sprinkle with Chow Mein noodles and serve.
