Spinach Rice

Ingredients
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 cup cooked rice
- 1 cup shredded sharp cheddar cheese
- 1⁄2 cup minced onion
- 1⁄4 cup milk, plus
- 2 tablespoons milk
- 2 eggs, beaten
- 1⁄2 teaspoon dried thyme
- 1⁄2 teaspoon dried rosemary
- 1⁄2 teaspoon Worcestershire sauce
- 1⁄8 teaspoon salt (to taste)
- 1⁄8 teaspoon pepper (to taste)
- 1 tablespoon butter or 1 tablespoon margarine
Directions
- Drain thawed spinach, and squeeze out excess water (I use kitchen towels for this).
- Combine spinach and the remaining ingredients except butter; mix well.
- Transfer mixture to a greased 1 quart casserole; dot with butter.
- Bake in a preheated 350° oven for 25-30 minutes, until well heated.
