Spinach Quinoa Breakfast Bake

Ingredients
- 6 large eggs
- 2 cups cottage cheese
- 10 ounces frozen spinach, thawed and drained
- 1 1⁄4 cups cooked quinoa
- 1 cup chopped green onion
- 1 cup crumbled feta cheese
- 1⁄8 teaspoon black pepper
Directions
- Preheat oven to 350.
- In blender, combine eggs and cottage cheese. Puree until smooth.
- Transfer to a medium bowl and stir in spinach, green onions, quinoa, feta and pepper. Spread into glass baking dish sprayed with cooking spray.
- Bake for 35-40 minutes or until golden brown and set.
