Spinach Pierogi Pizza

This Polish spinoff is adapted from the Pillsbury Best of the Bakeoff. I love spinach pierogis and anything shaped like a pizza! I use home grown frozen spinach-the amount you use is up to you. It doesn't wreck the recipe to use more or less. I also make my own crust, but I'm sure a ready made crust would work too. Show more

  1. Roll pizza dough out to fit a 14 inch pizza pan or a 9x13 baking pan; press dough into greased pan making it thicker on the sides. Prick the crust all over with a fork.
  2. Bake at 425 degrees F for 7-9 minutes until golden.
  3. Meanwhile saute onions and spinach in butter until onion is tender; stir in potatoes,salt and pepper.
  4. In a small bowl, combine the butter and garlic salt; brush over partially baked crust.
  5. Top crust with spinach mixture; sprinkle with cheeses and top with onion rings.
  6. Bake at 425 degrees for 15-20 minutes more.
