Spinach Pie

Serves: 4-8
Yields: 1 pie
Ingredients
- 1 (10 ounce) package frozen chopped spinach, squeezed dry
- 1 diced onion
- 2 minced garlic cloves
- 2 slices Canadian bacon
- 1 tablespoon olive oil
- 1 cup fat-free cottage cheese
- 2⁄3 cup reduced-fat feta cheese
- 2 large eggs
- 1⁄2 cup egg white
Directions
- Heat oven to 350 ( I use my toaster/pizza oven).
- Lightly cook onions with garlic EVOO. Cook Canadian bacon and chop to same size as onions. Mix all ingredients together in a large bowl. Spray a pie pan with cooking spray and add contents of bowl.
- Bake for 40 to 45 minutes.
