Spinach in Garlic Sauce With Lemon

Ingredients
- 1 garlic clove, chopped
- 2 teaspoons garlic, minced
- 1 teaspoon gingerroot, chopped
- 500 g spinach
- 180 g shiitake mushrooms
- 1⁄2 lemon juice
- 3 teaspoons all-purpose flour
- 180 g firm tofu
- 3⁄4 cup water
- 1 teaspoon salt
- 1 teaspoon sesame oil
- 1 tablespoon canola oil
Directions
- In a wok, fry the garlic together with the ginger for 1 minute
- Prepare the mixture by combining ¾ cup water, 2 teaspoons minced garlic, ½ lemon juice, ½ teaspoons salt and 3 teaspoons all-purpose flour
- Add the spinach and stir-fry for 1 minute then add the mixture
- Add the sliced Shiitake Mushrooms and simmer for 1 minute.
- Add the diced Firm Tofu.
