Spinach Feta Rice and Ham

Serves: 4-6
Ingredients
- 1 cup rice
- 1 cup chicken broth
- 1 cup water
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 2 teaspoons oregano
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 3 ounces feta cheese (or more!)
- 1 cup chopped cooked ham
Directions
- Combine rice, broth and water in saucepan. Bring to boil.
- Reduce heat, cover and simmer 15 minutes or until tender.
- Saute onion and garlic in another pan.
- Add to rice along with remaining ingredients.
- Heat until heated through.
