Spinach Cream Soup

Ingredients
- 18 ounces fresh spinach leaves
- 1 onion (thinly sliced)
- 1 garlic clove (minced)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 tablespoons flour
- 2 cups chicken stock
- 1⁄3 cup half-and-half cream
- 1⁄4 teaspoon celery salt
- salt
- pepper
Directions
- Saute onions with butter and olive oil until tender, add garlic cook for 1 more minute.
- Add fresh spinach saute until wilted.
- Add flour, mix well and cook for 2 minutes.
- Add Chicken broth, bring to a boil until liquid thickens.
- Cool for a few minutes.
- Pour into a food processor or blender, add half and half cream, celery salt, salt & pepper, mix well until smooth.
