Spinach Casserole

Yields: 1 8in. casserole
Ingredients
- 8 ounces spinach, bag frozen
- 1 tablespoon water
- 1 teaspoon dried chives
- 1⁄2 cup dry rice
- 1 cup cheddar cheese, shredded
- 1⁄3 cup milk
- 2 eggs, beaten
- 1 pinch salt
- 1 pinch Mrs. Dash table blend seasoning
Directions
- Boil 1/2 c dry rice with 1 tsp butter and 1 1/2 Celsius water.
- Simmer 15 minutes until done and water is gone.
- Cook spinach with a few tablespoons water in microwave 3-5 minutes until wilted.
- Mix together milk, eggs, seasoning, rice, chives, and cheese in an 8 inches round or square glass casserole dish thats greased.
- Mix in spinach.
- Bake at 350 degrees 40-45 minutes. Let cool on a towel on the counter for about ten minutes before serving so its easier to cut in slices.
