Spinach Casserole

A light side dish for a spicy meal.

  1. Thaw and drain spinach. Beat eggs with 1 tbsp water. Sautee onion in olive oil until goldens and let cool a bit.
  2. Mix spinach, egg mixture, onion and salt and pepper to taste, place in lightly greased casserole dish. Top with feta cheese. Bake at 350 for about 40 minutes.
  3. Serve at room temperature.
