Spinach Casserole

Ingredients
- 2 lbs frozen spinach
- 2 eggs
- 1 tablespoon water
- 1 teaspoon olive oil
- 1 small onion, chopped
- salt and pepper
- 3 tablespoons feta cheese
Directions
- Thaw and drain spinach. Beat eggs with 1 tbsp water. Sautee onion in olive oil until goldens and let cool a bit.
- Mix spinach, egg mixture, onion and salt and pepper to taste, place in lightly greased casserole dish. Top with feta cheese. Bake at 350 for about 40 minutes.
- Serve at room temperature.
