Spinach Calzones With Blue Cheese

The combination of onions, mushrooms, and fresh spinach packs a serving of veggies into each.

Ingredients

  • 10  ounces  Pillsbury refrigerated classic pizza crust
  •  cooking spray
  • 4  garlic cloves, minced
  • 4  cups  spinach leaves
  • 8  slices  vidalia onions or 8  slices other sweet onion
  • 1 13 cups  sliced mushrooms
  • 34 cup blue cheese, crumbled

Directions

  1. Preheat oven to 425.
  2. Unroll dough on to a baking sheet coated with cooking spray; cut into 4 quarters.
  3. Pat each quarter into a 6x5 inch rectangle.
  4. Sprinkle garlic evenly over rectangles.
  5. Top each rectangle with 1 cup spinach, 2 onion slices, 1/3 cup mushrooms, and 3 tablespoons blue cheese.
  6. Bring 2 opposite corners to center, pinching points to seal.
  7. Bring remaining 2 corners to center, pinching all points together to seal.
  8. Bake at 425 for 12 minutes or until golden.
