Spinach Brownies

Ingredients
- nonstick cooking spray
- 3 ounces semisweet chocolate
- 1 cup spinach, pureed
- 1⁄2 cup brown sugar, firmly packed
- 1⁄4 cup unsweetened cocoa
- 2 tablespoons margarine
- 2 teaspoons vanilla extract
- 2 large egg whites
- 3⁄4 cup all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
Directions
- Preheat oven to 350 degrees.
- Coat an 8x8 inch baking pan with cooking spray.
- Melt chocolate in a double boiler or over very low heat.
- In a large bowl combine the melted chocolate, spinach puree, sugar, cocoa powder, margarine, and vanilla. Whisk until smooth and creamy for 1 to 2 minutes.
- Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.
- Pour the batter into the pan and bake 35 to 40 minutes.
- Cool completly in the pan
- Cut into 12 bars.
